Folks thought I would share this journey, I put one of these in the mariande on Saturday, and I will wrap and hang this Saturday.

As many of you know I spent a while in Kosovo a few years back.  The majority of the population there are Muslim folks and as such you won't find ham/bacon and this stuff is used as a substitute.

I found it to be exceptionally good to eat.

Derek the way to eat this is thinly sliced, drizzled with olive oil and lemon juice, and topped with shaved parmesan cheese, Carpachio

Meat out of the marinade, wrapped in muslin, hang for about 10 days
