This is yummo - do try it...!!!
Satay Yummmmmmm 3/4 Cup Crunchy peanut butter 1 Tbsp coconut 2 teaspoons Curry (I use Keen's) 2 tsp Soy Sauce 1 cup water 1 clove crushed garlic 2 teaspoons sweet chilli sauce 1 Tbsp Fruit Chutnery (I use Plum jam, can use any red jam but for some reason, STRAWBERRY just doesn't do it). Combine all ingred's into pot and cook till cooked ;D - it will turn thick like a baby's nappy. This is where the fun starts, TASTE TESTING TIME, try some, it may need more chilli, curry or sometimes soy sauce.. Don't be afraid to add more water if its too thick, but stir it well. Have fun with this recipe, it is really quick to make, and is usually ready in under 10 minutes so have your meat already started. Add cooked chook is good You can make this up in a jar or plakky bag and take with you to camping site then do the cooking bit...Make sure the chook is cooked first and kept cold while traveling or pick up a cooked hot chook on the way to your camp site...etc etc dah deh dah if ya know what I mean - enjoy.. I love a satay - tried this one tonight. We have most of our stuff packed in the van ready for a six week trip starting Friday so I did what I could with what was left in the house.
Made the satay as per instructions - navigator confirmed baby nappy consistency. Didn't know what the 1 tblspn coconut referred to and didn't want to open a tin of cocunut cream so just put in a tblspn of shredded coconut. Stir fried some sliced beef and onions and then threw in some spinach straight from the vege garden. Put it on a plate with some steamed rice, topped with two tablespoons of the satay sauce - very nice - this one is a keeper. regards John |

I love Satay to the max. Prefer a little more heat in it though. I would put a teaspoon of Sambal Oelek in as well.. Aart |
