Drove home from a wedding on Saturday and the trucks are out and I picked up a box of mangoes - should have got a few.  Strawberries dirt cheap and cherries nice and fresh.

The females in my family love mangoes and as No. 2 daughter was having a sleep over made her some mango pancakes this morning and thought I would share it with you.  I used half the quantities in the recipe.




MANGO PANCAKES


2 Cups buttermilk (if not available 1 tablespoon of white vinegar into 1 cup milk can be used)
2 tspn baking soda
4 eggs beaten
2 tablespoons melted butter
1 cup mango puree or 3/4 cup diced mango
2 cups plain flour
2 tablespoons sugar.

Preheat and lightly coat cast iron pan or griddle.  Griddle is hot when a few drops of water dance on it.

Combine buttermilk and soda.  Add eggs, butter and mango.  Combine flour and sugar.  Add dry to moist and stir.

Pour 1/4 cup bater onto hot griddle for each pancake.

Turn when tops are covered with bubbles and edges are brown.  Repeat till batter used.

Freeze any leftover pancakes up to l month.  Place wax paper between pancakes and wrap with foil.

Carolyn, good to see a recipe using fresh mangoes. They always seem to be the tinned varities. Thanks for sharing. :)

KD if I make them again I would add some tiny diced whole mango as well as the puree.  The pancake mixture was good, quite light even when cold.

To completely turn it around make the pancakes with the small dice and larger, put a scoop of ice cream on the stack and more pureed mango over the top.   I think this would turn it into a very nice dessert.

Troyk I was amazed when I started googling just how many recipes there are for fresh Mango.  There is a muffin one with mango and coconut here that looks nice.

Dont forget on this forum there is a great Mango Chutney which I made last year and enjoyed very much.
