HOT CROSS BUNS

5 Cups plain flour (I used half bread flour half all purpose)
1/4 cup Castor Sugar
2 teaspoons dried Yeast
1 teaspoon allspice
1/2 teaspoon cinnamon
1 3/4 cups dried fruit (can be varied to taste)
1/4 cup melted butter
1 lightly beaten egg
good pinch of salt
2 1/2 cups lukewarm milk (or use milk powder and warm water)

CROSSES
1/4 CUP Self Raising (optional plain) flour
enough water to make into a smooth thick paste

GLAZE
1/4 Cup Castor Sugar
1/4 Cup Water
1/4 teaspoon mixed spice

Take from ingredients yeast, 1 tspn sugar, 1 tablespoon flour and about 1/4 cup warm water, mix all together and put aside to make a sponge. Some dont bother with this but its a habbit I always do after having a yeast that didnt rise.

In a large bowl put flour, sugar, allspice, cinnamon, mixed fruit.

Add to this lightly beaten egg, warmed milk and warm melted butter and yeast sponge.

Turn out and knead for 10 minutes until smooth, placed in oiled bowl cover and leave to rise till doubled (I left mine for two hours but it might take less).

Grease camp oven and I line mine with baking paper.

Knock it back and divide into 16 pieces. Knead each piece and arrange in Camp Oven (I used a 12" but a 14" would give more space). Put in a warm place to again double.

Put the beads on to heat up I used 28 all up. Once the beads had turned white I put them on the Camp Oven lid to start it heating. (This took about the same time as the doubling of the rolls (about 45 minutes).

Mix the flour and water to make a stiff paste for the crosses. I used a cliplock bag with a very small end sniped off to do this. I also used Self Raising flour but some use plain its up to you.

I put 8 of the beads for the underneath and spread the 20 around the rim of the oven. I turned every ten minutes and found they were cooked at 30 minutes. They should be golden brown and sound hollow if tapped. The offical temperature is 200C if you feel the need to use a temperature gauge.

Take them away from heat and for the glaze combine sugar, spice and water in a saucepan stirring till the sugar disolves and then simmer for about two minutes. Brush it over the hot buns then cool them on a wire rack.

Lil you have a few of the best bread makers on the forum going to Broke, I think I am off my "L's" but only to the "P's" yet.  I will feel I am a bread cook when I get a consistent result  :D  :D

I am sorry about Broke but this was booked for us with the CT group months ago and everyone was aware of it, I accept that you would never be able to suit everyone with a date and am pleased that Broke looks like being a great success as all the COGS have been.

I am pleased with these but for Sparky and me I would add a bit more fruit and double the spices next time.  Also in one of the recipes I googled they used grated orange rind and I think that would add to a flavour I enjoy.

Muz I laughed at that query, maybe I should ask Tupperware for a sponsorship  :D.

I would like a second one for my camping kit and leave that one at home but they dont seem to sell them anymore.  Mine would have to be 30+ years old and the measurements on it are handy.

On other sites they talk of dough buckets but I use my Tupperware large cake carrier upside down for that and I use the large measure cup which they dont sell any  more, it would be similar vintage to the pastry sheet but used more often and some of the measurements no longer visible but I use it for a mixing bowl mostly.

One thing I will always say about Tupperware its expensive but does last forever and I find very useful not like some things you can buy and never use.

There is a local distributor I ordered it from. You may be able to find one down there. The sheet is much thinner than Mum's tupperware one but I think it will do the job. Probably cheaper at $19.40

I thought I might try your hot cross buns today, as the buns you cooked looked good to me.
I used my C O cooker, 12 on the bottom and 12 on top, left them in a couple of minutes to long as the browned up a bit more than they should have, still very nice though. Bonnie took some to school, that was a mistake. :)

They look good. I did 8 under and 20 on top as it was windy and just caught a couple on the bottom slightly.  I think Derek said he uses 6 under and 18 on top and on a reasonable day I think thats probably a better ratio.  Of course you could use a temperature gauge but guessing is half the fun I feel.   I could smell mine about 8 minutes before I took the lid off and should have gone by that.

Didnt stop mine being eaten either.

Logfire I must open the homecare thing next time it comes, I just leave it and never look at it.  I did get the pastry crimpers one time and they work well.

I basically used Carolyns recipe except I used Laucke bread mix as my base, and don’t make a sponge, I add some extra yeast though, and only use 1 ˝ cups of water.
The crosses are self raising flour made into a paste.

They look excellent .....the ones I made at Thora didnt rise anywhere near as well as those.....I was in a hurry and think I made the mix to wet.

SBB the buns I made at Kidstone over the Easter weekend rose to high and the crosses browned of on the lid of the campoven, still tasted good though. :)
