Muesli Bread
A very nicely textured health loaf, which can be served fresh or toasted.
2x7g packets dried yeast
˝ cup warm water
2 tspns sugar
1 Cup fruit Muesli ( I used one from Aldi)
2 tbspns brown sugar
2 tspns salt
1 tbspn oil (olive)
2 cups boiling water
1 egg, lightly beaten
2 cups wheat germ
2 tbspns skim milk powder
3 cups wholemeal flour
2 tbspns soya flour
1 cup flour, extra for kneading
Mix the yeast in the water & stir until dissolved. Set aside
Place rolled oats, apricots, sugar, salt & oil in a large bowl.
Pour boiling water over these ingredients & leave to cool to lukewarm.
Add yeast, egg, wheat germ & powdered milk to the lukewarm rolled oats mixture.
Mix well. Sift flours together & stir into mixture.
Place 1 cup extra flour on the board & knead the dough for 10mins adding more flour if necessary.
Place in greased bowl, cover & allow to rise in a warm place until doubled in size,
about 45-60mins.
Punch down & form into loaves or buns.
Place into greased tins or greased trays & allow to rise in warm place for 30-45mins or until well rounded & almost double in size.
Bake at 200C  for 40mins.
Brush with butter & cool on a wire rack.

Muzz a great looking loaf, but appears to be a bit of work, none the less should keep the pipes clean.
