We just had an extended weekend at Macquarie Woods.  I still think this would be a great place for a COG.  The news says Thora once more has a flood warning.

I planned to add to my Youtube collection with a Burrito Pie.  I photographed all the preparation but was busy at the last and didnt get the final cooked dish.  There is some of it on the side of the plate following.  

I found it worked well to layer a liquidy meat/bean/salsa mixture with tortillas and generous amounts of grated cheese.  It only has to then be heated and the cheese melted.  It cut into wedges and although the chilli didnt suit all most of the COG people would have enjoyed it I am sure.

If you look carefully there are a lot of reviews of this recipe.  Not sure if our Tortillas are smaller but most used 2 or 3 per layer

I used a 12inch camp oven and I think the Tortillas were about 8" fortunately having read the reviews I had bought two packets of Tortillas in case I felt I needed them.  I used a full large packet of pre grated tasty cheese and not the amount specified.

I didnt use olives as the MOTH doesnt like them.

I cooked up all the mixture and froze it.  It was simply a matter of warming up the mixture leaving a bit in the bottom of the camp oven removing the rest of the meat  and then layering the Tortillas, meat and cheese.

I used three Tortillas per layer spreading them to take up most of the area of the 12" and then overlapping the next layer of them in the gaps.  

I used 6 beads down and 18 on top and allowed about 45 minutes for it to heat up and the cheese to melt.

It makes a large dish and I am very sorry I didnt get a picture of it cooked.

Carolyn,  I've suggested Macquarie Woods as a venue for a COG for ages, gotta be better than Thora weather wise, I'll bet it's damp underfoot at Thora now LOL.

On this side of the pond  a burrito is a spicy wrap.



& it is very definitely Mexican food, even if the Texans tell us Canadians our burritos and other Mexican food is very tame.

Where's the wrap Carolyn?

PD it was you who told us about Macquarie Woods in the first place.  We use it occasionally when heading back to Sydney after going out west.  We had about 19 rigs from the CT group and as you know it would fit 100s and its great for those who live out that way or within the couple of hours of it.

Sounds good to me, I am keen to to meet the regular COCIA crew, I didn't know where it was, googled it and clicked on to a Youtube site, I am having a guess that it is the one you posted, wasnt hard to guess with the name of the post/blog

As PD has said, I better brush up on my cooking skills :-[

Yep, I'll put my hand up for a COG early in the new year after the schools go back (you wouldn't go there during school hols) and Macquarie Woods is good for Mrs PD and me.

I wasnt planning a meet Michael just saying its a suitable place that wouldnt flood.
