As she had never done it before Maggie said to me that she wanted to cook a curry on her own using the camp oven. I was allowed to watch and give advice only. :-?
We love curries and have found the Patak Curry Pastes to be fantastic. You have all of the herb, spice and heat in a paste and can use it however you like. This is a favourite and first time cooked in the camp oven. Ingredients 750 grams shin beef 1/3 jar Korma curry paste Large onion sliced 2 cups chopped sweet potato 1 400 ml can of coconut cream Method Dice the beef and place everything in the camp oven. Place on heat and cook for about one and a half hours. After one hour if there is a lot of liquid part remove the lid from the camp oven to allow it to reduce. Getting organised Heat Beads on and curry in the oven Setting out a bed of Heat Beads for the oven The oven goes on the Heat Beads Giving it a stir part way through cooking A nice pot of curry Served with rice and a dollop of yoghurt. Looks delish Maggie.
You fed the troop/s without setting fire to yourself or the bush. Mission Accomplished - Well Done !!! I like my curries sweet so I would normally add a handful of saltanas as well [always, everytime, without fail]. Does the sweet potato provide enough on it's own? Must try it 'sans saltanas' next time :o As for advice Derek, I get glared at for "backseat driving" if I so much as clear my throat when the younger [teenage] males are attempting a camp recipe. ::) I can be a tad pedantic at times Now I find it is less stressful to go for a stroll, find a nice tree trunk to sit on and pray to the cast iron gods for what comes out of the pot to be at least edible! So far it has worked brilliantly :) |
