Post by maloney on Aug 29th, 2012 at 9:47am
This is a Pepin recipe (youtube) and he makes it look easy, the chook boned out

tandaco seasoned stuffing with added thyme, sage, rosemary, chives and parmy cheese

salt, pepper and stuffing added then rolled

tied up

into the camp oven

done

it was yummy, but i think i was a bit heavy on the stuffing

Wow, I want one :)

Good to see the Hillbilly being used there.  Have seriously been considering more use of mine.

Cheers

Thanks Derek, at xmas i did a turken where i boned a chook and stuffed it and boned a turkey the same and rolled the chook inside the turkey

sorry i don't have any pics making it or cut up it was a big day
the chook was stuffed with a spinach, mushroom and bread crumb mix, rolled not tied then sat in the centre of the boned turkey and all rolled and tied.
For Bathurst last year i did pizza chooks where i laid the boned chook out brushed on pizza sauce and all the pizza topings, rolled, tied and all the kids loved them.

Shane, I can see I am going to have to learn to bone a chook.  I usually just butterfly them.

Should have had a quail inside that chook. :)

Derek, i'm not real good at posting links so he's on youtube Jacques Pepin it goes for @ 10 min but during the video he says it should only take 1 min to bone a chook. I think it depends how much u like chicken to get down to 1 minute with practice. Although his method is so simple and easy compared to other vids of the same thing.

where do you purchase the "cooking" string from?

Bought my roll from the cooking utensils aisle at Woolworths. Not as big as the one he has though.

I was in coles this morning on my way to work and had a look for the cooking string and its actually in the stationary section, its a cotton twine and is marked on the box for cooking.

If you need a thicker twine, your butcher might sell you some if you ask him nicely.
