Cooked in Volcano Stove using a 4.5qt Campfire flat bottom oven sitting on the centre grill with the 5 beads on the bottom grill directly under the pot and 9 on top of the oven lid with Volcano 'Lid' (hood) over the lot. (too many lids in here)
The Volcano "Lid" certainly is efficient and works well with a camp oven. Start cooking with the camp oven lid ON, near the end take OFF the camp oven lid and just leave the Volcano LID covering everything, this browns the damper on top nicely as the Volcano Lid acts as a convection oven. I did the recipe below but added a cup of sultanas soaked for 24 hrs in Red Rum. (a Tommo trick) The damper recipe is dead simple, from The SCHAUER AUSTRALIAN COOKERY BOOK 1962 p548 DELICIOUS DAMPER: - 2 cups SR flour - 1 teaspoon salt - mix well with a scant cup of milk using a knife, do not touch with hands, I added the cup of rum soaked sultanas before the milk in case it was going to be too wet but I used all the milk, half fill a greased and floured round cake tin (I used a 6" x 2 3/4" tin). Cook for about 1/2 hour in a moderate oven. Roll in a clean towel till cold. Slice and butter. Have fun! David |
