Quick & Easy Left Over Turkey/Chicken Soup

2 (500g) tubs chicken stock
3 to 4 carrots, chopped
1 stalk celery, chopped
1 onion, chopped
1 clove ''minced'' garlic or some garlic paste
handful of frozen peas
skinless, boneless turkey/chicken
handful chopped fresh coriander
chilli flakes ''optional''

1 Bring the chicken stock to the boil in a medium saucepan . Add the carrots, celery, onion, peas, garlic and chilli flakes.
2 Reduce heat to low and add the chicken. Cover and simmer for 20 minutes.
3 Carefully add the chicken/turkey ''cut it into small pieces or shreaded'' and add it to the pot. Stir in the coriander and serve.
