Title: Roast Duck
Post by Derek on Jun 17th, 2013 at 7:08pm
Well we had camp oven duck tonight for dinner.  I had to pull out a 14" oven to fit the bugger :)

I ended up going for a simple stuffing.  Fresh bread crumbs, sage, sultanas for sweetness, salt and pepper with an egg to bind it.

Cooked for two hours on a slow heat.  Put the veggies in half way through but because of the slow cook they steamed and didn't crisp but soaked up the duck juices.

Overall a very nice dinner

Did you have to baste the duck during cooking or did the camp oven keep it moist?

No I didn't Astro. Every time I lifted the lid there was considerable steam and moisture. I cracked the lid for the last 20 minutes or so to brown it..

Looks good, I love duck, but I am the only one that eats it here, every time I do cook one Bonnie tells me she can smell the duck yard. :(

That has to be off-putting.
