Years ago when I was a young'n, just into camp oven cooking we used to sprinkle herbs and spices all over the roast, pretty mediocre  because who ever got first dibs, got all the good gear. So in the earlier years we invested in a syringe and injected the meat, a hell of a lot tastier. So more recently  we have been using a much improvised setup, it's a Cajun big daddy marinade injector which also allows injection of finely cut fresh herbs and spices into the meat.
