Did a corn beef in the camp oven today. I found a spice mix from Masterfoods the other day that I have never seen before called Bush Spice.
It has salt, sugar, rice flour, onion, garlic, pepper, paprika, celery seed, nutmeg, oregano, marjoram, parsley, rosemary, lemon myrtle, wattle seed and capsicum in it. I rubber it all over the beef and then roasted it with a couple of cups of water in the bottom of the camp oven. Thanks for the heads up on the Bush spice.
Will look for it in the shops. McCormick's also have a very nice Bush Lamb seasoning which is great on anything lamb. KD |

McCormick also have the Bush Spice with mountain pepper in the larger 138 g bottle, With the bush spice I use a little bit of Tuscan spice as well on all roasts. cheers Ron.

we are talking about corned beef , soaked in brine , not fresh silverside
I have never roasted brined beef before how ever did cook a fresh silverside once as corned meat , yes it was terrible , went back to the butcher and told him , he said it was miss labeled by the young miss in the shop |

That would be nice Corned beef is great for while travelling. Cryovacs well and so easy to prepare. Almost any veg can accompany CB. Aart |

Have roasted a corned (brined) silverside a few times in the camp oven and it comes up a treat, but you still cant beat the good old red gum (silverside) cooked the traditional way with vegies. Will definitely try that seasoning. ;)
