I recently had a turkey with apple and cranberry roll, so I thought why not chicken and sultanas.

Chicken roll with apple and sultanas.

Ingredients

3 chicken marylands
Stuffing mix
dried apples
sultanas
1 egg
marinade sauce (your choice)

Bone out the chicken, lay the chicken skin down. Mix stuffing mix, egg, chopped up dried apples, and sultanas,( I used a little water as well). Spread over the chicken then roll into a loaf.

Marinade the chicken and set aside until ready to roast.

Incidently, when I mentioned to the boss about dried apple in packets she gave me that withering "it's time you got out and into the supermarkets a bit more" look.

I think they would be available even in Innisfail supermarkets. ;D

JC... do they still sell those ripper pies at the little (baker??) shop just up from the spy camera shop?

We're took the Grades 5, 6 and 7s up to the Heritage Museum last year.  What a wonderful day it was.

How long ago did you get this pie, the baker that was here shut down some years ago, the pies from the local supermarket come from Ravenshoe, they make a good pie, and very nice bread.
