We have only used bought bread mixes ourselves. We use the Laucke Flour Mills brand from Wollies or the like. They have a good range of mixes as well.

The Boss does a couple of midnight to 6 a.m. shifts at our local bakery and she gets the baker to make me up 3 or 4 mixes (compatible to my loaf tin) which I salt down in the Waeco until I'm ready to use one.  just a matter of letting it thaw and rise in a bit of morning sun before it goes into the c/o.

Like Jeff said, Laucke Flour Mills have some ripper mixes, especially the scones, of which I use very regularly.

Cheers

Never tried salting down bread dough.

These photos are of my earlier goes at making bread in camp ovens. The bread is Dark Rye from a bread mix. I buy it from a shop that makes up their own mix.

Laukes worked best for us also :)

But now, a simple damper suits our needs.

Don't forget to try the Laucke scone mix.  I'm sure you'll be a convert.

We use it for a damper Seamus and it is very good. We use Coconut Milk with it normally. However for scones we prefer to use Jude's own recipe. :)

Right Jeff, I'll give that a go on Australia Day.  The grandkids will be here and they have put their order in for damper and golden syrup.  And mud crab done in the kero tin in the fire pit but I somehow don't think that is going to happen!!   ;D ;D

Give this a crack Seamus.

Wholemeal flour, powdered milk, water & a couple pinches of salt  [smiley=chef.gif]

Served with butter and golden syrup. Will  put it in the challenge tonight.
