Sharron’s Mum’s Boiled Moist Chocolate Cake
1 cup water
11/2 cups sugar
120 grams butter
2 tablespoons cocoa
2 eggs
11/2 cups self raising flour
½ teaspoon carb soda

Place sugar, water, butter, cocoa and soda into saucepan and stir over low heat until butter melts. Bring to the boil and simmer for 5 mins. When cool mix in the beaten eggs and self raising flour. Turn into a 7” round tin that’s bean greased and lined in bottom. Bake in moderate oven for 1 hour.
Because of the heat and fire restrictions we have I baked this one in my covered BBQ. This cake is very moist.
I made this cake for my wife Sharron and the recipe I borrowed from her late mothers cook book.
