Camp Oven Chicken Cordon Bleu
2 chicken breast fillets
3 slices Swiss cheese
3 slices ham
plain flour
salt and black pepper
parsley 
teaspoon vegetable oil for frying
1 egg
1 cup fresh breadcrumbs

Pound the chicken breasts flat between 2 layers of cling wrap.
Mix the flour with the salt and pepper.
Mix the breadcrumbs with the parsley
Place 11/2 slices of Swiss cheese and 11/2 slice of ham on each chicken breast. Leaving some space at the edges.
Roll tightly and press down a bit.
Whisk the egg with a little water and place in a bowl.
Put the breadcrumb mixture in a different bowl.
Cover the chicken rolls all over in flour and dip into the egg mix.
Now roll them in the breadcrumb mix until they are very thickly coated.
Fry till the chicken in the bottom of the camp oven till golden brown all over. Then tip out most of the oil out of the oven.
Place some coals on the lid of oven and bake the chicken for about 20min. or till cooked.
