I do like going to an Indian Restaurant and having a curry with paneer in it. Up until recently had never given a thought to making it myself but decided to give it a go after looking at numerous recipes on the net. I chose an easy one
All I used was a litre of milk, 1/4 cup lemon juice and half teaspoon of salt. Normally you would make it in a cheese cloth but all I had was a roll of chux and that proved ok. Put a litre of milk in a saucepan and heat until just starting to simmer Then remove from heat Stir in the lemon juice and Then sit for 10 minutes to allow the cheese to separate from whey Sit a colander over a bowl, line with the chux and pour in the cheese mixture. Let it The whey drain for a few minutes. Fold the top of the chux together and squeeze out excess whey. Open the chux and sprinkle on the salt and mix it in. Flatten the cheese down, place on a plate, put another plate on top and weigh it down for an hour After an hour unwrap and place in the fridge for at least ten minutes to firm and here is what you end up with, a nice firm cheese This was all made with a litre of milk and is a nice size for us. What I need now is a use for all the left over whey. :D |

Made a Tikka Masala Paneer for dinner using this cheese and PATAKS Tikka Masala curry paste.
Delicious and just how I remember it from the Indian Restaurants |

Derek if your interested in cheese making check out a fella on youtube " Gavin Webber " the Curd Nerd.
He shows how to make many cheeses at home including Jarlsburg and Parmesan to name a couple, he also sells the gear needed for making cheese. A few blokes i know from another forum have been getting right into the cheese making and have made some great cheeses. Its all done using shop bought milk. Itching to have a go myself. |
