Bear nearly half that list of timber for smoking I would have cut into blanks to make into pens.
The Olive timber has a very distinctive smell. Also has a beautiful grain pattern in the older trees.

Almost any Australian hardwood is suitable.....softwoods not so.

Shackles the olive is a very nice timber which I use in place of hickory. The hickory is too sharp a flavour to me and the olive gives a taste of hickory with out that sharpe taste.

Bacon done with olive wood is very nice, cheers
