Big meal. We often have our main meal during the day when travelling; time to clean up in the daylight and not going to bed still feeling full.

These are a great camping breakfast.

I bought these four cup pans for size as they fit nicely in my camp oven as well as the Weber BabyQ and great for the two of us.

What I did was mix some mince with herbs and salt and pepper.  I then greased the cups and pressed the mince into them to form a cup then into the oven for ten minutes. At that stage drop an egg on top and back in the oven until the egg is firm.

Maggie tells me we need more greens so served on a bed of spinach wilted in butter.

Here is a different version.

Grate a large potato then squeeze out as much of the juice as you can.  Season with salt, pepper and a little paprika then press into a greased muffin tray to make a basket shape.

Into the oven for ten to 15 minutes until they start to brown up then pop an egg on top and cook until the egg is done to your liking.

Serve with whatever you like.  Ours was a late brunch so served with a salad.

Would have liked to have cooked this outside on the Ozpig over an open fire in my little cast iron skillet but we have had near nine inches of rain in the last week with three of them overnight so all a bit waterlogged.

I saw this concept for a breakfast online.

What I did was peel and cut a red onion into wedges, slice half a dozen flat mushrooms and fried them together in a little olive oil and butter until the onion starting to go soft.

Dropped in two heaped spoons of chopped garlic (yes I like garlic) from a jar and cooked a few more minutes then seasoned with salt and pepper.

Then put in one of the little single serve bags of baby spinach and cooked until it was wilted.

I then made a couple of holes in the mix and dropped in two eggs and put the lid on until the whites were set.

Served with a couple of chunks of toast.

Was very, very delicious.

ALDI had these 500 gm packs of larger than usual button mushrooms for $4.99 a kilo.  I actually weighed them out of the pack and they actually came in at 680 gms so happy.

Sliced and into a pan with a big knob of butter and some olive oil as well as some salt and pepper to taste and cook with a lid on until the mushies are starting to soften.

Mushrooms are full of water when fresh like this so took the lid off, added a good dash of Worcestershire sauce and letter simmer to reduce the liquid.

Thicken with a little cornflour and served on toast.

Yum.

These were on a half price special at our local Woolies last week.

Nice kippers, two nice fillets in this tin.  Not smoked.

Great on toast for brekkies or brunch as these were.

Oily fish is good for you.

Inspired by Kevvie for telling me the tomato sauce flavoured ones are good.

But alas, they only get a 2 out of 10 from me.  The tomato overpowers the flavour of the fish.

Sorry Kevvie.   :)

Maggie and I love our salmon, raw or cooked in all different ways and particularly enjoy smoked salmon.  When we were last in Tassie we ate a lot of the local stuff.

On a recent shopping foray I spied this pack of New Zealand King Salmon and when I read the packet saw that it was Chinook Salmon as opposed to the Atlantic Salmon from Tasmania.

Today’s breakfast was avo on toast with the salmon and a poached egg on top.

The salmon was more oily than the usual one but the taste was superb and I couldn’t fault it.  I will be heading back for more.

I love many, many, many things in life.  Here are just three of them:

I love playing with food
I love eating food
I love a Maccas breakfast when we are travelling

But . . . . I often say to myself when eating out, “I think I can do better than that.”

So, here is my version of a Maccas breakfast cooked in my Breville toaster grill.

Toasted muffin
Home made meat patty
Bacon
Egg
Hash brown

If I would do anything different, next time I will put the hash brown in a little earlier than the rest so it crisps up more.

I give this one a 8.5 out of 10.  :P

Maggie said this morning, how about a cooked breakfast.  Who am I to say no particularly when Woolies is just down the road.

Sourdough toast (I am going to learn to make this one day) bacon, egg, pork chipolata, black pudding, grilled tomato, portobello mushrooms, wilted spinach and baked beans.  Followed by a cup of tea.   ;)

Not sure it belongs here though under “A Simple Breakfast”.  ;D ;D ;D ;D

Something different today.  We really do love our salmon in all forms although a bit wary on sashimi or raw as have had a few too many not so fresh ones.

This is a new brand today from Woolies that I have never seen before and was 40% off.  It isn’t Tasmanian but Norwegian.  Four nice thick slices in a 100gram pack.

10/10 from me and Maggie.
