Title: Date & Walnut Loaf Post by Derek on Aug 12th, 2021 at 1:03pm
Recently bought a small loaf tin in Woolies. It is one of Jamie Oliver’s products. As soon as I saw it I realised it would fit nicely in my 10 inch cast iron camp oven as it is only 7 inches long but nice and deep. Also sit nicely in the Weber BabyQ on a trivet.
Next was to develop some cakes/loaf recipes to fit. First up is this date and walnut loaf that I did cook in the oven as I was experimenting with mixture size. I did think the mixture would be too much for the little tin at first but it turned out just right. Ingredients 1 cup chopped dates 3/4 cup brown sugar 3 tablespoons butter 1 teaspoon bicarbonate of soda 1 cup boiling water 3/4 cup chopped walnuts 1 1/2 cups self raising flour Method Preheat oven to 160C. Grease and line the loaf tin with baking paper. Put dates, sugar, butter and bicarbonate of soda into a saucepan. Pour over boiling water. For this use a medium size saucepan as the bicarb foams up a lot. Heat mixture to a boil and simmer for a couple of minutes. Remove from heat. Allow to cool for a bit then add the flour and walnuts. Mix flour in until just combined. Pour into lined loaf tin. Bake for 45 minutes, or until a skewer comes out clean. This turned out to be really nice. One to add to the list of keepers. 5312085E-6DFB-46FC-8530-833CF4F1D228.jpeg (264 KB | ) 20C51C5D-5FF7-4BD4-A5D0-9B80EF42C20F.jpeg (460 KB | ) 35ADBD7E-EBF6-4ABF-BABA-D9DC3ED1F589.jpeg (458 KB | ) DE96B2F8-7C28-483C-A137-4433814FB788.jpeg (444 KB | ) 8B4FC93B-342B-4F16-A825-F2BE79A3655A.jpeg (395 KB | ) |
