Title: Christmas - 2021 Post by Derek on Nov 8th, 2021 at 5:18pm
It is time!!!!!!!
Not long to go so time to start thinking about getting organised with the Christmas goodies. A big jar of “Pissed Plums” - prunes marinating in port and several cups of sultanas marinating in some Bundy to make rum balls. 5E8AD759-F3E4-4DA8-BAD8-3307B76881E6.jpeg (183 KB | ) 9B34A2C2-4BC3-44F2-BB32-76B2229D3344.jpeg (379 KB | ) |

First of my Christmas goodies today after the pissed plums. I used a recipe from online but twice the amount of rum and rolled them in chocolate sprinkles instead of desiccated coconut.

1 kg of mixed fruit soaked in a cup of rum for several days then added 2 cups of prune juice and left it overnight. Stirred through thee cups of self raising flour and a teaspoon each of nutmeg and cinnamon. Into the oven @ 125 degrees for 35 minutes.
This mix made 18 mini Christmas cakes that can also be eaten as puddings with cream, custard or icecream. 22E734C0-8D4E-498B-B742-2B02DFA01F20.jpeg (396 KB | ) |

Second batch of rum balls. These are my favourite and have been making them forever. They have a very rich strong rum flavour.
Basically just mix everything together, roll into balls then roll in coconut. 9 Weet-Bix crushed to fine crumb 2 tbsp Cocoa 1/2 cup shredded coconut, plus extra for rolling 1 cup sultanas soaked in rum for several days 3 tbsp extra rum 1 can sweetened condensed milk D32D7D11-E775-45B5-97B0-C3C51FAB1222.jpeg (345 KB | ) |

Christmas Brandy Balls
First time I have ever made these but the brandy was in the cupboard so why not. If you appreciate the taste of brandy in Christmas Cake or Christmas Pudding you will love these. I expect the rich brandy/fruit taste will improve even more as they mature further before Christmas. Same recipe just about as the rum balls earlier but substituted brandy for rum 9 Weet-Bix crushed to fine crumb 2 tbsp Cocoa 1/2 cup shredded coconut, plus extra for rolling 1 cup sultanas soaked in brandy for several days 2 tbsp extra brandy 1 can sweetened condensed milk F5BA9494-A7D8-47AD-B2DE-73F5D763A4F7.jpeg (409 KB | ) |

This could well be my last batch of rum balls for this year. 32 in this lot. MInd you we do have the Brady Bunch as a family with all their offspring. :)
Once again a simple recipe. Just mix it all together, roll into balls and then roll in coconut. These ones are made with the finer desiccated coconut. 250g packet of Milk Arrowroot biscuits 3 tablespoons cocoa powder 1/2 cup desiccated coconut 395g can sweetened condensed milk 1/2 teaspoon vanilla extract 2 tablespoons extra rum 2/3 cup sultanas that have been marinating in rum for several days Extra coconut for rolling FCDB01D8-7A4E-4C16-89C8-722F880B4589.jpeg (344 KB | ) |

I expect Maggie and I may “drop in” for a few before Christmas. ;D ;D ;D
I have put these up on our Facebook Group. Quite a few people making them gluten free using the gluten free weet-bix. Might be worth a go for you Kev. |
