Title: Smoked Salmon
Post by Derek on Oct 30th, 2024 at 11:32am
I know some of you like the finer things in life so thought I would share.

Today I ate the most delicious smoked salmon I have ever made.

It is Wild Canadian Sockeye Salmon as opposed to the usual Atlantic Salmon.

It was nice and dry, the colour (these are red salmon) was amazing and the flavour exquisite.  They do not say what wood was used for smoke but had that rich smoke taste, albeit lighter, of a Kipper.

Imported of course but packed by Barossa Fine Foods.

Bought it at Woolies on special at $7.40 for 100 grams.

We had it this morning on toast with a poached egg.

Living in the Barossa we do laugh when we see Barossa Fine Foods labels as, well, they aren't actually in the Barossa (They're at Edinburgh 50km away).

Also many treat them with suspicion after a coupe of salmonella deaths about 3 years ago...
