After eating some of Saltbush Bills homemade snags at the Glenreagh COG (first photo) I got the idea of making my own sausages, particularly good Italian sausage.  Local butcher puts MSG in his and Maggie is allergic to it.

Been doing some research, as you do online and have decided to definitely run with it.

This morning I bit the bullet and bought a small 3 litre sausage stuffer (second photo).  Decided on the small one as only making for two of us.

I already have a meat grinder but know I will also need a spice grinder as well.

I have been told it is going to have to sit under the Christmas Tree all wrapped up until Christmas Day  ::) but that is all good as I need to still do more research, particularly recipes.

Fun times ahead and a whole new hobby for me.  :)

I had a go at sausage making a while ago.
I used our Kenwood Chef with mincer and sausage making attachment.
The local butcher gave me some skins to try.

I tried it a few years ago but what put me of was I only had a Aldi mincer using as a stuffer.

Have just ordered Molly’s Christmas present for me so we should be ok. Have a heavy duty mincers as part of our tomato processing operation. Could have used it but prefer the proper equipment.

Intend to use the wine fridge for the salami when we get there. Cheers

I got an email saying arriving today and yep, Fastway.  Usually takes a couple of days from the Toowoomba depot.

Must have been driving down the highway when I last posted as it has arrived.   :)

She’s a big bugger.  Was the smallest of their models having a capacity of 150gms so pleased I didn’t order the bigger one..

Came with a spare set of blades, spare set of carbon brushes for the motor, a sieve and a cleaning brush. Was supposed to have a socket to remove the blades but not included.  Have sent them an after sales please explain. 😊

Now waiting for the scales I ordered then off to get some sausage skins.

I have orders from family for Boxing Day breakfast sausages so better get my finger out.   ;D ;D ;D

I bought a couple of SS food pans to catch the mince and mixing. Molly went, they would be good for dying so ordered another two.. mine will get a lot of use for home produce.

I was home however was sitting at the kitchen table with my ipad and an email popped up saying it had been delivered.

Went down to the front door and there it was sitting just outside.

Didn’t hear a thing.  Even the dogs didn’t hear them.

My casings arrive this afternoon from smoke and cure and my food land has boneless rolled sho7lder pork on special for $5 kg.

There is nothing on the website to say what the ingredients are in that seasoning.  Some I looked at recently had MSG in them and I know our local butcher uses it as well. 

Maggie is allergic to MSG.  One of the reasons apart from the hobby side of it that I wanted to get into making my own.

Have sent them a message asking if they use MSG. Molly does not want to use it and looking at the contents I do not think I will. Simply receipe with natural spice are easier, cheers and goos nigh5

What started me looking more in ernest was this photo on Facebook.  Bloke was bragging about all the sausages he made with this and a look at the ingredients list showed Flavour Enhancer 621 which is MSG.

I took a pack of sausages back to the local butcher because of MSG.

Ended up ordering some skins from the Casing Boutique.  Going for size 26/28 and 28/30.  I generally like a thinner sausage but these should be good to start.

My first attempts will most likely be Italian Pork

Morning Derek just had a email back from Smoke and  Cure some of their mixes have MSG but the Bratwurst one does not.

Will be doing my own as rhete are so many and you get to choose the natural ingrediants.

I have continued to get an email every three/four days.  One arrived overnight however saying due to the delay would I be happy to be compensated $20 so I could buy one locally.

Ordered one on the second of December and still not here by the 20th. They ref7nded my money so ordered another one to see what happens.

As soon as I saw the freight company was Fastway A shutter ran through me as they have nevered delievered the couple of times before. Fingers crossed this time cheers.

Realised today that as long as I keep it around 1.5 kilos of mix I can use the K beater on our KitchenAid to mix the sausage mix.

It sure beats doing it by hand.
