Well I finally did it. I found a recipe that puts potato and sausage in the same casing. They consist of 35% beef, 35% pork and 30% potato. The recipe is for a kilo of snags
Ingredients 350 grams pork shoulder 350 grams chuck steak with a bit of fat on it 300 grms potato’s 15 gms Salt 6 gms White Pepper 2 gms All Spice 1 gm Nutmeg 30 gms Diced Onion 60 ml Icy Water Method Boil potato whole with skin on. Allow to cool Put meats, potato and onion through the mincer with a course grind. Mix together all ingredients until you have a sticky mix. I used 28mm collagen casings. Now the test taste on these is absolutely amazing. Will be doing more for sure. IMG_3300.jpeg (150 KB | 6
