Grew this Kent Pumpkin myself and pulled it out of the garden a few days ago.

Would never buy a pumpkin this big but do not want to waste any either.

Decided to do some baking.

First up cut a big wedge out and steamed it until soft and mashed it.

First up was afternoon tea.  Plain pumpkin scones.  Not Aunty Flos recipe but a good one anyway.

Served up with our home made fig and cinnamon jam and some thick dollop cream.  They were a lovely golden colour

Then my signature dish from when I used to do the camp oven cooking demonstrations around the traps.

Seemed everyone wanted to try my Pumpkin Fruit Muffins and I have forgotten how many dozens I made in my old Bedourie Camp Oven.

These have a lot of olive oil in the recipe and freeze well.

Pumpkin Fruit Cake has always been a favourite of mine and this recipe is a beauty.  These photos are fresh out of the oven after a two hour cook.

Well that is all for now but I just told Maggie to expect Pumpkin Soup for dinner tomorrow.   ;D ;D ;D

Update on the pumpkin!!!

Two crusty bread sticks and a big pot of creamy pumpkin soup for dinner. 

Have still got a third left but do have all the ingredients for a sweet pumpkin pie so may do that tomorrow.

Any ideas for other things?????

What about slicing it up into slices and roast them
sprinkle a little nutmeg on the slices before roasting
I do that when I have a roast.

We enjoyed a slice of pumpkin pie tonight.

I have about two cups of pumpkin left.  The recipe for the pie is a hand me down from my son in laws American Grandmother and I am unable to share it.

Have a few more coming on the vines Kev.  Will end up having to give some away.  I planted Kent and Butternut vines and was hoping for a cross between the two. There are a couple that look promising.  😉

Lived on acreage years ago a large pumpkin vine appeared and we ended  cross breed ones butter nut shapes were green like the kent and the kent shape one the colour of butter nuts. The vine covered a area of about 10 square metres. Yes we ended up with a lots of them They were very nice to eat. I think I still of plenty of the seed
