Have seen a couple of jar4ing recipes calling for thick sliced bacon. Easy way was to do some myself. Been awhile so while I was shopping Friday I saw some nice small pork shoulder roast.

So have just rubbed it and bagged it. Only 665grams but will do what I need it for. Will give it 4 days in the fridge then smoke it. Cheers Robert

Smoked this with apple today, first time I used the smoker in a while. Temperature gauge was useless no another one on the shopping list. Rigged one of my meat gauges and all was well.

Used a Misty Gully Maple rub with the cure already in it. Tasted heavenly, remember using this on a rabbit last year and that turned out excellent as well.

Not sure if it is going to last as my Molly. Was enjoying the sample.
