Not the first time I have made this one.  Last did it in one of the cooking competitions on here.

Had a nice crop of Kent Pumpkins in the garden, most around the 2 kilo mark, and looking at different ways to cook them.

Ingredients
1000 grms Diced Pumpkin
1000 grms sugar
1 Large Lemon
10 cm Piece Ginger

Method
Dice pumpkin and mix through sugar.  Sit covered at room temperature overnight.

Next day dice the lemon, remove any seeds and blitz in a blender.  Grate the ginger.

Place pumpkin in heavy based pan, add the lemon and ginger.

Bring to a simmer and cook for 30 minutes.

Using a potato masher break the pumpkin up to the consistency you want you jam.

Place into sterilised jars while still hot.

I am currently up to the pumpkin and sugar mix and will add further photos tomorrow.  You can see the sugar already starting to dissolve.

The finished product.  It is an amazing tasty jelly jam.

It reached 105 degrees which is the usual jam jelling point in 25 minutes.

Sure did.  Blitzed it in blender to a pulp.
