Not the first time I have made this one. Last did it in one of the cooking competitions on here.
Had a nice crop of Kent Pumpkins in the garden, most around the 2 kilo mark, and looking at different ways to cook them. Ingredients 1000 grms Diced Pumpkin 1000 grms sugar 1 Large Lemon 10 cm Piece Ginger Method Dice pumpkin and mix through sugar. Sit covered at room temperature overnight. Next day dice the lemon, remove any seeds and blitz in a blender. Grate the ginger. Place pumpkin in heavy based pan, add the lemon and ginger. Bring to a simmer and cook for 30 minutes. Using a potato masher break the pumpkin up to the consistency you want you jam. Place into sterilised jars while still hot. I am currently up to the pumpkin and sugar mix and will add further photos tomorrow. You can see the sugar already starting to dissolve. IMG_6380.jpeg (211 KB | 5

The finished product. It is an amazing tasty jelly jam.
