We don’t do this often as very aware of the fat content not only in the meats but also the cheese.  Cholestrol has been good for years now and don’t want that affected from animal fats.

Sliced lonzino and two different salamis.  The little bowl has Fig, Date & Balsamic Chutney in it.  Beautiful stuff and cannot remember where I bought it.   ::)

Was a nice lunch platter with a pot of black tea.

I have actually stopped making salami for a while as have so much vacuum packed in the fridge.  At least I know I can successfully make it and will do more when the supply gets low. 

I will say however all of them are better the longer I keep them in both flavour and texture.  The lonzino is to die for.
