This was a dish my mother used to make, it is a good dish as you can use any fish, and it is easy to make in a camp oven.

Ingredients.

Fish
Eggs
1 can of mushrooms
Bread chopped into pieces
Butter

Method

Steam fish until just cooked, then break the fish up and remove any bones if there is any.
Boil the eggs, and then slice.
In a frying pan or camp oven melt some butter, add bread and slightly brown the bread.
In the Camp oven spread the fish over the bottom, then add half the mushrooms. Then layer the sliced egg, spread the remaining mushrooms over the eggs. Spread the pieces of toasted bread over the top.
Bake for around half an hour.

This is a good way to use those fish that are not the best eating, even though I used
Barramundi in the photos.

Other than the can of mushrooms it is just use what you have.

What an intriguing combination - fish, eggs and mushrooms. Would never have thought of it myself, but it certainly looks interesting.

I have a vague memory about this being called a "Poor Mans Pie".
Old bread, eggs and a filling - usually left over corned or beef roast.

I am inspired to try the fish as pictured!  Looks delish.....

I donít know where the recipe comes from, all I know is mum made this dish when we were kids. She used whatever fish was available, so I guess that could be deemed a poor mans pie, although we never thought it as that when we were growing up.   :)

How important is the mushrooms in this dish?
Can I substitute something else? 
'Himself' doesn't do mushrooms   :(

I reckon you could leave them out however they provide a level of liquid.  Perhaps replace it with knobs of butter

Smoked cod would go well with this recipe I reckon.

As Derek said, the mushrooms make the sauce and keep it moist, so may be a nice thick sauce would work as well. I like the idea of using smoked cod though.

Interesting dish. I've never cooked a fish dish in a camp oven but I suppose there arent many foods that can't be done in a cast iron pot.
