After doing a bit of research, I decided to make myself a UDS for smoking meats. Its a bit rough around the edges and my technique needs a bit of fine tuning, but my first batch of jerky turned out ok. Due to excessive heat, I only really smoked the meat for about 10 minutes and was trying to avoid cooking it, so had to pull it out and finish it off in the dehydrator inside. But I felt 10 minutes was pretty close to what I needed after tasting it anyway, maybe an extra 5 or 10 minutes would be perfect. I just need to make a basket to hold my heat beads, and spread them out a bit. I had them in my heat bead starter which I think concentrated them too much and they got way too hot. I used some chunks off a dead citrus tree in my backyard which had a reasonably pleasant smell and taste to it

Nice one tadpole. I made one of those ages ago and use it quite a bit.
There are lots of plans and different ideas on the internet for anyone wanting to make one. Just search UDS or ugly drum smoker.
The large rack and the lid from the big webbers fits exactly into and onto a 44gal drum.
Mostly I cook slabs of beef ribs or pork ribs in mine and sometimes a brisket.

Well done if you have access to lemon or apple tree pruning or cuttings keep them for the smoker.

Lemon good for fish and chicken and I like using apple for my pork shoulder and brisket.

I threw this thing out a month or so ago. Have just bought a house in Pinjarra and was doing a bit of culling. Figured i can make another one down the track. Would like to have a go at making an offset smoker next time so its better suited for low and slow cooking, but need to get some tools better suited to metal working as I've only really got woodworking stuff
