I cooked this leg of lamb today in my BBQ using heat beads. Both Judy and I where raised on this smoked lamb. Our local butcher will do this lamb on request not cheap but well worth the end result.

Looks fantastic and also brings back memories from when we were kids.

Dad worked at the Riverstone meat works and I remember this being our Christmas “ham”.  Have never forgotten the taste.

To confirm the leg is smoked by your butcher and you finish the cook?

Can you find out what wood he uses, how long he smokes it for and at what temperature would be interesting.

The butcher smoked the lamb, hickory was on the label, I would think that they would be looking at a temp similar to ham some where around 67 to 70c
but I will inquire.
