My Kaffir Lime tree that I usually just use the leaves in Thai cooking has literally dozens of limes on it.  Same thing happened last year and I was at a loss what to do with them all.

I really should have only made half the quantities as I filled all the jars I had, ten of them as well as a large bowl.

Last photo is my tasting sample.  :P

Wow, is it a powerful brew, but also quite delicious.  The comments suggest it is a strong flavour and suggest using it as a baste for chicken (that I am looking forward to) or having it with lots of cream on scones.   :)

The first part of the recipe is to remove the pips.  Look at the second and third photos.  Thousands of the little buggers.  But I got there.

It is setting now however the recipe said to get it to 104 degrees.  Only had my coffee frothing thermometer and got to 96 degrees.

All cooling now so hope it sets well in the jars.

Well done mate it is a very nice marmalade. Will bring some to the cook up and compare. Not sure what recipe Molly used. Cheers Robert

The marmalade set beautifully.  Breakfast was marmalade on toast.

Maggie said next time I should try adding some ginger.  That could prove tempting.

The notes on the recipe say to try it as a chicken marinade.  Will do that soon.

Shall bring an extra couple of bottles to the COG.

Just a table spoon of fresh grated ginger is enough.In Peachester we did a Cumquat and ginger jam.

Thanks Robert.  Have saved that recipe.  Just looking at my tree I am not sure I will get a lot of cumquats this time round.  Was thinking of brining them in brandy.   :D
