Pumpkin Fruit Muffins (Read 2440 times)

This is my speciality recipe. Enjoy!

PUMPKIN FRUIT MUFFINS

INGREDIENTS (Makes six large muffins as seen in my avatar pic)

1/2 cups of self raising flour 
1/2 teaspoon salt 
1/4 of a teaspoon of nutmeg 
1/4 of a teaspoon of mixed spice 
1/2 cup sugar 
1/2 cup sultanas 
1 egg 
1/2 cup olive oil 
1/2 cup cold mashed pumpkin 
1/2 cup milk 
 
METHOD 
Mix together the flour, salt nutmeg, mixed spice, sultanas and sugar.  In a separate bowl beat together the egg, oil, pumpkin and milk.  Combine the ingredients but don't over mix.  Put paper muffin cases into the muffin pan, you can buy these from a supermarket and they come in their own little container, and fill them evenly using all the mixture.  Place the pan on a rack in a preheated camp oven.  Place oven on a bed of coals with more on top.  If you have good hot coals, they should take around twenty minutes. 
 
(For you city slickers  use your electric oven at about 180/200 degrees)

Don’t know why it says ex-member on this old post back in 2005 but doesn’t matter.   Smiley

Had a pumpkin left over from Alstonville so decided to do some baking.  One of the things I cooked was these muffins.

I popped a cherry on the top of each one.  Turned out lovely.  Moist and crumbly. 

When I was doing camp oven cooking demos I don’t think I ever did one without cooking some of these.
