HI, Everyone,

This recipe is one my grandmother made and was handed down overs the years and is really simple to make.
Had to be converted to metric.
Great with corned beef or a cheese platter with a long neck. Wink
 
1  litre water
2 tablespoons  salt
1 teaspoon caster sugar
1 kg pickling onions, peeled Cry
1 tablespoon of caster sugar
600 ml good quality white wine vinegar
3 bay leaves

Method:
Put the salt and the teaspoon of caster sugar into a saucepan and bring to boil. Add the onions and cook for two minutes. Drain and dry completely. Put the tablespoon of caster sugar in the bottom of a large sterilised jar and add the onions. Cover with vinegar and shake the jar to dissolve the sugar a little. Add bay leaves and seal. Store in a cool dark place or in the fridge for least a month.

Variation:
Use red wine vinegar for a different colour.
Add a chopped chilli for extra fire or garlic.
Try them you wont be disappointed.

I saw some bags of onions like that at Coles today.  Will get some next time I go, if they are half as good as the pickled vegies I should enjoy them.

One question are the bay leaves fresh or dried?  I have a small tree with fresh bay leaves growing.
