Just spent the last week at Lake Hattah in the Kulkyne National Park in Victoria.

Great place with some of the best wildlife I have seen for many a day.

The Camel Camper Trailer went well and mallee roots are tops for coals for the camp oven.  Had such a great time I forgot to take hardly any photos.  Roll Eyes

Hi. Derek

Sounds like you had a good trip. What was the weather like?
Did you see any Mallee Foul or there nests?
I found a nest some years ago, but it appeared to be abandoned.

Weather was great Murray.  Up to 23 during the day and around 6 at night.

No didn't manage to see a Mallee Fowl but recognised around 40 species of birds over the time I was there.

Hi Derek,

What happened to the recipe for the pudding Derek.

Think you should make it mandatory, if anyone posts a picture of their fare they should also post the recipe, I'm getting wider just thinking about all the recipes. yum yum.

My 2 cents worth, now you can tell me to bugger off.

Cheers
Kate

Ok Kate you asked for it.

The pudding is an old English one called Spotted Dick ................ don't laugh thats it's real name.  The original recipe has suet in it but I use butter. I also believe it may have had currants and not sultanas but I guess you could use either.

INGREDIENTS
250 self raising flour
1/2 teaspoon salt
120 gms butter
60 gms sugar
120 gms sultanas
120 mls water

METHOD
Mix flour, sugar and salt (can sieve it if you have one) in a bowl and then rub in butter.  Mix in sultanas, add the water and mix to a smooth batter.  Pour into a well greased pudding bowl, cover bowl with double layer of foil and tie with string.

Place in a large camp oven with water half way up the pudding basin and steam for 1 to 1 and 1/2 hours.  Keep an eye on the water level and don't let it boil dry.

Serve with custard and cream

Generally not allowed.  That pile of wood alongside my campfire was collected from the side of the road before I got there.  It pays to ring National Parks Office and find out first.
