OK, the meats went well,
What's every bodies favourite CO veg & how do you like it??? Smiley Smiley
for me it's spuds & carrots cut into serve sizes, lightly sprayed with oil & tossed with some mixed herbs & spice, done in a dry CO.
soft veg in another CO,
Cauliflour, Brocoli & corn on the cobb, a light spray of oil & into a dry CO.
Back it up with a potato bake in another oven & youv'e got a feast!!

I'm not sure I actually have a favorite.  Anything that will bake boil or steam is all good although nice crispy baked spuds take a lot of beating.

Like Derek I don't have a firm favourite, baked spuds or a bit of baked pumpkin and some cauliflower are hard to beat.
Bought some potatoes in a shop at Forbes last year called "Red Rascal", red skin and cream coloured flesh, they were so good I went back a few days later to get some more, yep you guessed, all gone and no more coming.

I use tomatoes quite a lot.  Either whole, crushed, sun dried or as a paste.  I love tomatoes.

ITALIAN FLAVORED LAMB CHOPS

INGREDIENTS
Lamb Chops
Tomato

Onion
Olives
Herbs
Salt & pepper

METHOD
Make an aluminum parcel. Spray with oil.  Place chops on foil and top with tomato, onion, olives, herbs and season well.  Seal aluminum parcel and cook in camp oven for around 25 minutes.



BACON AND EGG STUFFED TOMATOES

INGREDIENTS
Large tomatoes

Bacon
Egg
Chopped onion
Grated cheese

METHOD
Scoop out the seeds and pulp from the tomato.  Beat egg and mix in chopped bacon and chopped onion. Place tomatoes in camp oven.  Fill cavity with egg, bacon and onion mix.  Sprinkle with grated cheese and cook until cheese starts to brown and egg cooked.



SAVORY HERB DAMPER ROLLS

INGREDIENTS
Two cups self-raising flour
Two teaspoons baking powder 
Pinch salt
Milk
Half cup grated tasty cheese
Half cup chopped
sun dried tomatoes

Good sprinkling of Italian herbs
Sliced black olives

METHOD
Mix flour, baking powder, salt, tomatoes, cheese and herbs together in a bowl.  Mix in enough milk to make a soft wet dough.  Divide into four portions and place on a well-greased and floured tray.  Sprinkle some sliced olives on top and place in the preheated camp oven.  Takes about 35 minutes to cook.



CARAMEL CHOPS

INGREDIENTS
Lamb shoulder chops
Tomato paste
(about 3 tablespoons)
Crushed garlic
Grainy mustard
Good tablespoon of honey
Slurp of soy sauce,
Brown sugar

METHOD
Mix all ingredients together and spread over chops.  Place chops in heated camp oven on a trivet with aluminum foil underneath.  Lots of coals on top.

Baked turnips or swedes. Huh

Usually have these as an accompaniment to lightly curried feral goat testicles served on a bed of steamed brown rice. Roll Eyes

This is a dead set camping in the bush meal. You will not have any trouble with normally welcome intruders to your sleeping bag, guaranteed. Embarrassed

Seriously though, I reckon a baked dinner has to have parsnips and/or horseradish. They, after kipfler potato's, would be my CO cooked favourites. Smiley

We do swedes (orange sweet potatoe), wrapped in alum foil, shiny side out and into the coals. Dash of butter when done. Cheesy

A little translation please, what are red rascalls?

Mick, here is one:

Chicken Tomato & Wine By The Serving

Diced Raw Chicken
Stewed Tomatoes (home made preferred)**
White Wine/Tomato Wine
Sliced Onion
1/3 c. Cucumbers diced in 1/4" pieces
1 tsp. Dried basil
Garlic Powder/Garlic Salt to taste

It’s easier to cut chicken in to bite sized pieces if it is partially frozen.  Set aside.  Cut onion(s) in half, then 1/4" slices across, saute until flexible.  Add wine, 1/4 cup per person.  Simmer 10 min.  Add stewed tomatoes*, stir, and warm.  Add chicken.  Cover.   Cook 10 min.  When chicken looks light on all sides, Add diced cucumber (1/4 cup per serving).  Add basil.  Simmer.  Taste.  Add garlic powder or garlic salt to taste.

* if stewed tomatoes lack celery, onion, carrot, or parsley, you may want to add them to the stewed tomatoes as a pre-dish preparation exercise.

10" cast iron frying pan with matching lid is an in house cooking utensi when cooking for one, but this is one that can also be cooked in a Dutch Oven outside over coals.


** If anyone wants my home grown stewed tomatoes recipe, I can just about do that blind folded.
