You mentioned peach pie earlier on. I've made a couple with the recipe out of the
'Bush Cooking' book (Savage & Lewis), less the coconut & have had pleasing results so far.
I found that the first one was a bit under done, & was nearly like a self saucing pudding but the second one, cooked that little bit longer, turned out better.
It is probly not the genuine article as you only layer peaches on the bottom of a dish, then pour the mix over the top (creamed butter/sugar etc), so it ends up a bit cake like on top. That's why ya can get away with it if it's a bit under done
Top that off with some custard & possibly some of Micks home made ice cream, it rounds out a meal very nicely.
From here on in, I'll have to be taking some photo's.
