Pork Roast & Cheesey Potatoes (Read 4747 times)

I made a GREAT pork roast with a fabulous home-made BBQ Sauce last night.   I also made some REALLY cheesey hash brown potatoes! 

Starting with the BBQ Sauce:

2 cups ketchup
2 cloves garlic, minced
2 Tbsp. tomato paste
1 cup apricot preserves
2 Tbsp. Worcestershire sauce
2 Tbsp. Dijon mustard
1 medium onion, minced
1/2 cup brown sugar

Add all ingredients to a well oiled 10" Dutch oven. Stir to mix. Heat to boiling. Reduce heat and simmer for 30 minutes.

Makes about 3-1/2 cups

I drizzled some olive oil on the roast and seasoned it with salt and pepper.  I placed it in the hot dutch oven with a little more olive oil and browned it a bit.  Then I put the sauce on and cooked it over a very low flame and 17 coals on top.

Next came the potatoes!

1 pkg. frozen Hash Browns
8 oz. sour cream
1 stick butter
1-1/2 cups cheddar cheese, shredded
1 can cream of chicken soup
1/2 C diced onion

Melt margarine & soup together. Add sour cream and cheese and cook until cheese is melted.  Add onion and potatoes and stir.  Bake until bubbly and done (approx. 40 minutes) with 14 coals on top and 7 on the bottom.

Thanks, Muzz!   The original sauce recipe called for orange marmalade and I went to the grocery store from work, and I would have SWORN I had some orange marmalade at home . . . but I didn't.  I thought the apricot preserves would work well, and they did!  The original recipe also didn't have any brown sugar in it, and I think you need a little sweetness to the sauce when you use it on pork.   

I'm thinking with duck that the orange marmalade would be GREAT!  Let us know how it turns out!

This looks wonderful, not sure if we get frozen hash browns, but its not a lot different to our potatoe bake in the end result except you used the cream of chicken soup and I use a french onion soup mix.  I was reading a magazine the other day and picked up another kind of recipe using a cream of mushroom soup and I guess that would go ok as well.

I found it interesting that you used coals top and bottom for the potatoes and flame and coals for the pork.  Was there any special reason for this?
