This is how my mother made stuffed peppers when we were kids and is different from the way most folks make stuffed peppers! Hope you like them as much as we do!

2 to 2-1/2 pounds ground beef
1-2 onions, chopped
2 cloves garlic, minced
2 cans Tomato Soup
2 soup cans regular milk (to make tomato soup/sauce)
2 cups white rice (cooked as directed)
Seasoning salt (I like Lawry's)
Pepper
1/2 cup seasoned bread crumbs
8 peppers, cut in half lengthwise and seeded
1 cup Cheddar Cheese, grated
Bacon, chopped into 1-inch pieces

Brown beef, onion and garlic until done. Mix beef mixture with rice, bread crumbs and seasoning salt. "Stuff" beef & rice mixture into each green pepper half. Place in a 9x12 baking dish (sprayed with Pam). Mix together tomato soup and milk. Pour over peppers.

Cook at 350 for approximately 45 minutes, basting occasionally with soup "sauce". When peppers are done, add chopped bacon on top of each stuffed pepper. Cook for an additional 10 minutes. When bacon is cooked, top each pepper with cheddar and let melt.

One thing I like about this recipe is that you use less peppers because you slice them in half to stuff. The bacon and cheddar also add to the great taste of these peppers!

Thanks for the recipe Julie, I have made some of your meals & they have been excellent so this is a must try too. I do make stuffed Capsicums also (Peppers) but have always done them by just cutting the top off. I then poach them in a tin of Tomato Soup. The Bacon will be a special edition. Thanks!

Skip, I've been told that:

Capsicums = peppers in varied colours
Mince - ground meat (beef, lamb, chicken, pork......)


So, what do you say?

Hi LK, I'd say your right. Aussies call any Bell Pepper regardless of it's colour a Capsicum.
We usually say "Red Capsicum" Green Capsicum" or "Yellow Capsicum" quite clear Smiley


And meat that has been through a grinder or mincer as it is known here is called just that "Mince" it could be any of those you listed or sausage mince!. Again we say "Pork Mince", "Chicken Mince" or whichever we are referring to. We like to keep our allies on their toes. Smiley

Aperantly it is an Aussie thing to put beetroot on a burger or sandwich, we have a Sth African working with us in my home office & it drives him nuts watching me put it on a sandwich.

Why not just call them beets???...
cause you can root a beet but you can't beet a root Grin Grin Grin Grin Grin Grin

We have funny names here for some things.  When I first came to Oz as a kid we used to call them beets.  In the UK you get red beets and sugar beets.  That has all changed now though as they call them beetroot.

Here we also call swiss chard ........ silver beet for some reason.
