Curried Sausages (a little different) (Read 8254 times)

I knocked up these Curried Snags tonight Kemo Sabe's and although a little different to what I'm used to they were the grouse.

I don't know where this came from but it was in my Handy Billy!

1KG Thick Beef Sausages
1TBSP Peanut Oil
1 Brown Onion sliced
2TBSP of mild curry powder
1Cup Beef Stock-(I used a beef stock cube dissolved in hot water)
1 400 gr Chopped Tomatoes
1 Cup Frozen Peas
1/2 Cup Sultanas
(Don't be put of by the Sultanas they are beautiful in this)


Place sausages in saucepan and cover with cold water. Bring to a boil over high heat & hold boil for 2 or 3 minutes. Drain sausages.

Heat oil in large pan,cook onion for about 3 minutes or until soft. Add curry powder, cook whilst stirring for 1 minute or so, until fragrant.

Add sausages ,stir to coat in curry mixture. Add stock & tomatoes,simmer uncovered for about 5 minutes or until thickened slightly. Stir in peas & sultanas & cook for another 5 minutes until thickened and peas are heated through. Check sausages are cooked through and serve on a bed of rice.

Preparation Time   10 minutes
Cooking Time        20 minutes

This is a very easy and very tasty feed.

Nice recipe Skip and looks good.

Actually sultanas and chopped apple are quite common in mild curries.

I am not a lover of sultanas in Curry ..My mother used to make them that way when I was a kid... and I never liked it..and I can't say why.....one those things I guess.... But if you put pineapple in it...that would be a different story.
