Great idea Carolyn..
It just so happens that I have proof of how easy it is.
This link shows in the last couple of photos the application of a pizza done similarly as you described.
Sure makes it easy getting the pizza out of the oven.

I'm going to try it this was next I do a bar cake or similar.

Just out of curiosity "what is parchment paper" called in Australia.. maybe baking paper???

from the ORACLE...Baking Paper is silicone coated release paper which is manufactured for use in producing bakery goods and can be used for multiple bakes.

Back to the Apple crumble.

The photo may look ok, but the top was not crunchy. Should I have left it in a bit longer? 

I did use fresh apples which I cooked in CO first then put the top on, there was quite a bit of liquid, so some steam might have kept the top soft. Should I have left the top ajar to vent the steam?

Made an apple crumble at our 4wd club camp oven cooking competition last weekend. Never used coals before, but managed to get a crisp top with some hot coals.  The judges were impressed (as were other members who gobbled it up). I didn't win the section, but it was sure fun trying.
