mate how does one build those little pikelet's you were knocking up in large quantities? And was that Maple Syrup on the little guys?
RT they were very good and would like to make 'em for some friends! Smiley

Try a basic pikelet batter.
The flat CI pan I use it specially made for "Pofertjes" as they are called. (No gay pikelet jokes)
The surface looks like outside of a golf ball. Little depressions in the CI

As you won't have such a pan I suggest that you put the batter in a cleaned out squirter bottle.  eg tom sauce bottle.
Squirt out very small quantities to make a 1" or 25mm round pikelet.
Work fast to keep them hot, add some finely shaved butter on top.
Sift some icing sugar over them and add maple syrup..

Serve on small plates with toothpicks.

That looks like the Gem tray I used at the COG. Can make 15 gems whereas the Pofertjes trayonly has 14 & looks shallower. Looks like you will have to make another CI purchase. Cry

Your dead right about the pofertjes being shallower Keith.
5 or 6 mm deep for the pofertjes.
Our pofertjes pan can do 19 at a time and is 22 cm across.

Nothing more and nothing less. Wink

The trick is in the butter, icing sugar and syrup you put on top.

You can buy the pancake mix in the bottles.  Just add water and shake. Greens make a good one.  I think also you can get a Maple Syrup flavoured one as well.

These go great on top of those little portable gas stoves.

What confuses me is that when I check out Poffertjes websites they often have the same pan as the one I have (deeper holes) and the pancakes are much bigger ie not flat.

Mine is original and imported from the land of the clog wogs.
It has 19 holes..as does the one Logfire found.
Mine is definately shallow..as about 6mm
Can't work it out mate.

I noticed at that site they used a combination of plain and buckwheat flour and yeast.  

There is a commercial buckwheat pancake mix which would do the job fine.

Pancakes/pikelets to me are all much of a muchness just a thicker or thinner mixture of much the same ingredients but I  havent ever used yeast.

As said below its what you put on them makes the difference.  Real butter and real maple syrup is mine.

It is a little shallower RT but not very much. It seems there is more than one way to skin a cat. I am reading about it all at the moment and it seems there are different ways to cook & present these little suckers even in Holland.

Holland is very strange..
There are 12 provinces in a country smaller than Victoria.
You can travel 150 klms and they speak a different dialect in the north.
Even I have trouble understanding that mob in the north.
Bit like travelling to Gympie.   Grin Grin Grin

Hi Derek,

I used the recipe that Kaye sent with the pan. I left the mix for about 4 hours and it does thicken up a fair bit.
Here are some tips.
1. Use a bamboo satay skewer to turn the pancakes or a very small fork.
2. Use something to squeeze the mix into the Pan. I used an empty capilano honey squeeze bottle and it was great.
3. The small gas cooker is the best for cooking these . I found the hotplate clumsy.

Warning Derek they are very good & extremely moorish. Bet you can't stop at a few Grin

Look Great Skip and thanks, my grandkids would love them.  I did go to the link but had troubles buying as a Guest and I am not a fan of PayPal so I backed off.  I got spam from it the other time I joined and vowed never again.  It crossed my mind there would be no reason not to use my ginger gem tray.  Then again there is a Senior Dutchman living up the road who might have one he no longer uses, I have to strike it lucky in the CI purchases sometime. Wink

Judy brought a Ginger gem CI tray in Hervey Bay when we were there. (Log fire you one a heart in the ginger gem stakes) And will give it a rip this week. Judy said thanks for the tip on the squeeze bottle a good idea. I think letting the mixture stand is also good...I do it with Yorkshire pudding mix for a better result.

You can easily use the Ginger Gem tray Muzz. I reckon Keith has a few questions to answer. I think he would do very well being a seller of CI. Grin
Everyone probably has their own recipe but I will include Kaye's here. I like it because it has no sugar in it and the icing sugar & maple syrup provides all the sweetness one needs.


INGREDIENTS


*600Gr S.R. Flour
*1 Ltr full cream milk
*3 Eggs
*5Mls Vanilla Essence
* 1/2 tsp salt (1Mls)


THE MIX
Mix eggs with vanilla
Add salt to flour & blend with milk
Best results make 3 hours before
Add some milk if too thick- mine was perfect with this mix-Skip

This is my bit
In the pan put a tiny dob of butter I wiped with a buttered paper towel and cook one or two to get the feel for it and adjust the heat acordingly, it takes a surprising amount of heat. Don't forget the squeeze bottle. Wink
I served them up as in the happy snaps with the Maple Syrup (The Camp Brand from Canada is as good as it gets & worth the extra few bucks-believe me)

This batter is wicked for normal pancakes & pikelets just use a swipe of jam to sweeten things up.

I should add this make a lot of batter far too much for 4 of us. So it was put in the fridge overnight and outstanding pancakes for breakfast- Lemon Juice and white sugar. Smiley
