Hedlow Muddy Macaroni Bake

500g Minced beef, lamb or pig
200g diced bacon
Large red capsicum
1 large onion diced
250g macaroni
Half a bottle of tomato sauce or as much as you like
Couple of big handfuls of grated cheese.

Cook diced bacon, capsicum and onion in 10" CO on a medium heat COALS until tender.
Remove from CO and brown mince really well on hot COALS.

While cooking the above boil macaroni on COALS until tender.

Add diced bacon, capsicum and onion mix to mince along with macaroni and tomato  sauce and mix well.

Top with grated cheese, place CO in a cool spot and add 2 shovel fulls of hot COALS to the lid. Cook until cheese has melted.

For my Hedlow dish I doubled everything and used half each of pork and beef mince.
Easy to make in a electric fry pan in the kitchen as well.
Also good on a sandwich hot or cold and as a Jaffle filling

My bride had a leg of lamb out this morning.
Couldn't help myself...had to drag the CO out and did a snappy roast dinner tonight.

No dessert though.
Too much tucker over the weekend...
