Banana & Walnut Bread
This easy-to-make bread
Preparation time:  20 minutes
Cooking time:  45 minutes
Makes 1 loaf
2 cups (300g) SR flour
1/3 cup (70g), firmly packed brown sugar
100g walnuts, coarsely chopped
1 tspn bicarbonate of soda
2 eggs, lightly whisked
1 cup (250ml) milk
1 cup (2 large) mashed bananas
Pre-heat oven to 180C.  Line the base and sides of loaf pan with baking paper. Sift flour into a large bowl, add the sugar, walnuts and bicarb soda and stir to combine. Add the egg, milk and banana and gently fold until well combined.  Spoon the mixture into the lined pan.  Bake in oven for 45mins or until a skewer comes out clean.  Set aside to cool completely.  Cut into slices to serve.
Store in an airtight container.

I was ready to go the CO was right and a bloody great southerly blew up and everything turned to s... so had to finish it in the oven, still not a bad result.

This bread has become very popular with many of our visitors.  It is easy to make, must have to admit that I have baked it in the oven...but I am keen to give it a go in the Camp Oven

Tried it today Muzz & very happy with the results.
I reckon this is Diabetic friendly too, the blood sugars behaved themselves. The Apple Cider after bounced 'em of the roof though.

Cindy knocked up a batch on the weekend. did not add the sugar, but used a cup of sultana's, coconut and cinammon.

still moist after 3 days, and there is not much left to take to work.

all of my favourite tastes in this batch, yum
