Hi everybody!

Found my way here while I was looking for the definitive recipe for damper.

Been cooking great meals in my well worn camp ovens for years but never got round to damper.  Off to Fraser in March next year and thought we might need some bread this time.  

So far I've collected about dozen recipes and must admit I'm confused  Smiley.

Do you use plain flour or self raising flour?  Do you add baking soda or soda bicarb?  Salt and/or sugar?  Butter or no butter?

I could spend the next few days to try every combination, but I thought I'd ask the experts  Smiley

Sorry if I should have posted this in another category, but this is why I'm here ...   Smiley

PS when I asked the Minister for War and Finance how to make damper I just got a blank stare ...  Smiley

Hi Derek,

Capalaba is south west of Brisbane so we've had a lot of noise and a bit of a downpour but nothing serious, thanks.  I lent my missus my Paj today and yesterday for transport to and from work (city) so she'll be fine.

I'm no expert but basically

self raising flour
bi carb - same as baking powder
liquid can be milk powder & water, milk or beer.

Thats pretty basic, I just had a look through the breads & dampers section on here (which I'd suggest you do)
Poddy Dodger plays his cards pretty close to his chest, I was looking for his recipe which is bloody nice (tried it first hand) but to no avail, I guess it is one of those "I can show you but then I'll have to kill you" recipes  Grin Grin Grin Grin

I just hope I don't live to regret disclosing my award winning damper recipe to you lot !!
4 cups SR flour.
2 tablespoons Powered Milk.
2 teaspoons Baking Powder.
1 teaspoon salt.
1 tablespoon sugar.
Sift these dry ingredients into a bowl, mix, then slowly add water while stirring with a broad blade knife until it is stiff but moist. I prefer a pretty dry mix but this is up to you and remember this is damper not bread, don't over work the mixture.
Sprinkle a thin layer of PLAIN FLOUR into your oven and when this turns a tan colour and crazes your oven is the right temp. Tip the mixture into your flour covered hands,( this give a nice brown crust), shape roughly and tip quickly into your oven. I use a trivet as it prevents the damper getting a thick hard crust on its bum..
OK, check after 30 minutes by tapping with the handle of a knife, it should be golden brown and sound hollow, tip it out into a clean tea towel. Serve with butter and golden syrup.
You can add any number of things to the mix, dried tomatoes with olives on top, sultanas, whatever you fancy.
I've won damper cooking comps with this recipe, its a good one.
