Thanks to everyone who responded to my question about roasting a chicken.  I attempted my first roast while camping this week.

I pre heated the CO and rubbed a little oil, salt an pepper on the chook then put it into the CO and put the lid on.  I could hear it sizzling away inside.

About an hour later I put some baby potatoes in to cook for the second hour.  However, the sizzling stopped and I could tell that there was not enough heat to really bake the chook.  It seemed to be more stewing than roasting.  So I stoked up the fire and put some more big hot coals on the top and let it cook for another hour.

The result was brilliant! Perfectly succulent meat with a crispy skin and delicious potatoes.  I even ate the skin on the potatoes which I usually find unpalatable.  I made the gravy using the juices and everyone scoffed it down.  It is probably the best, no-fuss roast meal I have ever made!

Here is the proof!

Coals, CD.  It was in the fire ring at the camp site.
