Great minds think alike CD and I was thinking what if I couldnt
use sugar and did a google on "diabetic pickles".  Some ideas come up (one some commercially available ones using splenda) and I was interested in this article about vinegar.  Many years ago I read of the benefit of apple cider vinegar.

One of the many things I enjoy being part of this and other internet groups is the ability for it to diversify a little from the main agenda and hardly a day goes by when I dont learn something.

I agree with Rastas I dont think you would get anything near the same end result but it might still come out tasty enough and its not going to cost the earth to trial it.  I would consider without the brown sugar putting generous spoonfuls of the spices.

I was just having a chat to a friend who makes "diabetic" jams....

She adds the sugar substitute right at the end of the cook out process to avoid the "burning" of the substitute, and uses an amount of gelatine (or agar) as a thickening agent to allow the jam to set.  It really is like a fruity pulp jelly that is spreadable. 


So, just thinking out loud.... I wonder if this concept (to give body to a chutney) would work in a pickling arrangement, particularly if vinegar/salt is the pickling solution?

or I could be thinking out my butt too....

I made some of this today - probably about my third batch.  As we have quite a few new members I thought I would post this.  Its one of those things that improves if you let it stand a few days or so.  This is all I got from 8 moderately large onions  Cheesy

I then wished I had made double.
