One of my favourites is to place a piece of bread in the bottom half, crack an egg onto it and then cover with bacon all over. don't put bread on top and just cook it like that.  MMMMM crispy bacon and egg toasty. Polish sausage instead is just as good too.

Make sure your ji is well seasoned though.

Smileyyummmm sounds good I will have to try that....I quite often cook some bacon cut up with onion and tomato....mix it with some beaten egg and grated cheese....can even put mushrooms in....makes a tasty snack....Kez.

Why don't you try doing it French toast style? Dip the bread into some lightly beaten egg and put the bacon inside the toasty? Of course, you would probably have to pre-cook the bacon, which makes for extra work I suppose. Which in turn probably defeats the purpose. But worth a try.

Well worth doing..  Put the pre cooked bacon on the outside of the (french toast) toastie to keep it crisp.  The when cooked add maple syrup and whipped butter....

Canadian toastie.. hmmmmmm
