When I am camping, I sometimes prepare an omelette for breakfast using two camp oven lids. The pictures below depict an inverted Billmans 15" lid as the cooking plate and a Billmans 12" lid is used as a cover.

The advantages of this method is that it allows the cheese to be nicely grilled without over cooking the omelete. It also negates the need to keep a fry pan in the kit for this purpose.

Terrific SJ, I went and made a three legged stand 200mm high to sit the lid on after seeing your pics, removes the risk of your brekky ending up in the ashes.
Why is it that some people think that camping is "roughing it", like you we eat very well when we're touring and camping.

I can atest to the fact that a 20" Cabelas lid will hold a 15 egg omelette.
Over a slow heat..does a great job..non-stick as well.

Sometime ago, I also knocked up a three legged lid stand which sounds very similar to yours. It certainly works well, however I seldom  take it away camping because I've found that three strategically placed rocks or logs of a similar size, work just as well and of course by not taking the stand, means something less to have to pack, carry and store during the  trip.

I think people who claim camping is "roughing it", either haven't tried it, or if they have; they haven't either ate or slept well during the trip. I think as a general rule, if people, especially women and children, eat and sleep well, then they will generally enjoy the experience and won't consider they have  "roughed it".

As you correctly indicated PD, there is absolutely no reason why people shouldn't be able to prepare food of the same variety and quality as they enjoy at home.
